Chef Bryan McClure, a Richmond native, fell in love with cooking at a very early age. He began his journey into the restaurant industry as a dishwasher at Red Oak Café in Goochland, VA at the age of fourteen. He continued working in various restaurants as a line cook while attending business school at Virginia Tech in Blacksburg, VA. It was here that his passion for cooking was ignited. Upon graduating, Bryan returned to Richmond to work at Lemaire Restaurant at the Jefferson Hotel under renowned chef Walter Bundy, honing his skills and rising quickly through the ranks to Sous Chef. In 2011, Bryan left Lemaire to fulfill his dream of working for a Michelin starred chef at Next Restaurant in Chicago. At Chef Grant Achatz's restaurant, Next, Bryan learned many new techniques and skills that further excited his love of cuisine. Bryan was also able to spend time working in the front of house as a food runner and expeditor, further expanding his knowledge of overall restaurant operations. After moving back to Richmond, Bryan has worked as the Chef de Cuisine at Pasture, and is currently back at the Jefferson Hotel as Sous Chef of Lemaire.
